Ingredients:

  • 3 lb chuck roast
  • 2 tablespoons vegetable oil
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon cayenne pepper (optional, for extra heat)
  • 1 cup beef broth
  • 1/4 cup lime juice
  • Salt and pepper to taste
  • 12 small corn or flour tortillas
  • Fresh cilantro, chopped (for garnish)
  • Diced onions (for garnish)
  • Lime wedges (for serving)
  • Optional toppings: sour cream, avocado, shredded cheese, salsa

Instructions:

  1. Prepare the Chuck Roast:
    • Season the chuck roast generously with salt and pepper on all sides.
    • In a large skillet, heat the vegetable oil over medium-high heat. Sear the chuck roast on all sides until browned, about 4-5 minutes per side. Transfer the roast to a slow cooker.
  2. Cook the Vegetables:
    • In the same skillet, add the sliced onion and minced garlic. Sauté until the onions are softened and fragrant, about 5 minutes.
    • Add the chili powder, cumin, smoked paprika, oregano, and cayenne pepper (if using). Stir to coat the onions and garlic in the spices.
  3. Slow-Cook the Roast:
    • Pour the onion and spice mixture over the chuck roast in the slow cooker. Add the beef broth and lime juice.
    • Cover and cook on low for 8-10 hours, or on high for 4-6 hours, until the beef is tender and easily shreds with a fork.
  4. Shred the Beef:
    • Once the roast is fully cooked, remove it from the slow cooker and shred the beef using two forks. Return the shredded beef to the slow cooker and mix it with the cooking juices.
  5. Assemble the Tacos:
    • Warm the tortillas in a dry skillet or microwave until pliable.
    • Fill each tortilla with a generous portion of shredded beef. Top with chopped cilantro, diced onions, and any other desired toppings.
    • Serve with lime wedges on the side for squeezing over the tacos.

Enjoy your Chuck Roast Tacos, a flavorful and satisfying dish that’s perfect for any taco lover!
