  • 1 lb chorizo sausage, sliced or crumbled

  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Fresh parsley or cilantro, for garnish

Instructions:

  1. Brown the Chorizo: In a large pot, heat olive oil over medium heat. Add the chorizo and cook until browned, breaking it up if using crumbled chorizo. Remove the chorizo from the pot and set aside.
  2. Cook the Aromatics: In the same pot, add the onion and bell pepper. Sauté until softened, about 5-7 minutes. Add the garlic, smoked paprika, and cumin, and cook for another minute, stirring frequently.
  3. Add the Beans and Liquid: Add the soaked beans, diced tomatoes (with juice), bay leaf, and broth to the pot. Stir well, and bring the mixture to a boil.

  5. Finish the Stew: Add the browned chorizo back to the pot, and season with salt and pepper to taste. Allow the stew to cook for an additional 10 minutes to let the flavors meld.
