Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 pound ground beef or turkey
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (8-ounce) can tomato sauce
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • Salt and pepper to taste
  • 12 ounces spaghetti
  • 1 cup shredded cheddar or Monterey Jack cheese
  • Fresh cilantro or parsley, chopped (optional, for garnish)

Instructions:

  1. Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Drain and set aside.
  2. Sauté the Aromatics: While the pasta is cooking, heat the olive oil in a large skillet or pot over medium heat. Add the diced onion and sauté until it becomes translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Brown the Meat: Add the ground beef or turkey to the skillet, breaking it up with a spoon as it cooks. Cook until the meat is browned and no longer pink, about 7-8 minutes. Drain any excess fat if necessary.
  4. Make the Chili: Stir in the diced tomatoes, tomato sauce, and kidney beans. Add the chili powder, cumin, paprika, cayenne pepper (if using), salt, and pepper. Mix everything together and bring the mixture to a simmer. Reduce the heat to low and let it cook for about 20 minutes, allowing the flavors to meld.
  5. Assemble the Dish: Divide the cooked spaghetti among serving plates. Spoon the chili over the spaghetti, ensuring each portion is generously covered.
  6. Garnish and Serve: Top each plate with shredded cheese and chopped cilantro or parsley if desired. Serve hot and enjoy your Chili Spaghetti!
