Chicken Scallopine is a classic Italian dish featuring thinly pounded chicken cutlets that are lightly pan-fried and served in a bright, tangy sauce. The dish is often paired with ingredients like lemon, capers, white wine, and sometimes mushrooms, creating a perfect balance of flavors. The delicate chicken soaks up the zesty sauce, making it an ideal choice for a light, yet flavorful meal. This recipe is both quick and easy, perfect for weeknights but elegant enough to serve for special occasions.
Chicken Scallopine Recipe
Ingredients:
- 4 boneless, skinless chicken breasts (pounded to ¼ inch thickness)
- Salt and pepper, to taste
- ½ cup all-purpose flour
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1 cup chicken broth
- ½ cup dry white wine (optional)
- ¼ cup fresh lemon juice (about 1-2 lemons)
- 2 tbsp capers (drained)
- 2 tbsp fresh parsley (chopped)
Instructions:
- Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Dredge each piece in flour, shaking off the excess.
- Cook the Chicken: In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Once the oil is hot, add the chicken breasts and cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Make the Sauce: In the same skillet, add the remaining tablespoon of butter. Stir in the chicken broth and white wine (if using). Scrape up any browned bits from the bottom of the pan. Bring the sauce to a simmer, then stir in the lemon juice and capers.
- Combine: Return the chicken to the skillet, spooning the sauce over the chicken. Let the chicken simmer in the sauce for 2-3 minutes to absorb the flavors.
- Serve: Transfer the chicken to a serving platter and pour the sauce over the top. Garnish with chopped parsley and serve immediately.
Serving Suggestions: Chicken Scallopine is delicious served over pasta, mashed potatoes, or with a side of sautéed vegetables.
