Ingredients:

For the chicken:

  • 1 lb boneless, skinless chicken breasts or thighs, sliced thinly
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp garlic, minced
  • 1/2 tsp ground ginger

For the peanut sauce:

  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp honey or brown sugar
  • 1 tsp sriracha or chili paste (optional for heat)
  • 1/4 cup coconut milk or water (to thin the sauce)

For the noodles and assembly:

  • 8 oz rice noodles or egg noodles
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 cup snap peas or broccoli florets
  • 2 green onions, sliced
  • Fresh cilantro or basil for garnish
  • Crushed peanuts and lime wedges for garnish

Instructions:

  1. Marinate the chicken: In a small bowl, combine the soy sauce, olive oil, garlic, and ginger. Toss the sliced chicken in the mixture and let it marinate for at least 15 minutes.
  2. Cook the noodles: Prepare the noodles according to the package instructions. Drain and set aside.
  3. Cook the chicken: Heat a large skillet or wok over medium heat. Add the marinated chicken and stir-fry for 5-7 minutes until fully cooked. Remove from the skillet and set aside.
  4. Make the peanut sauce: In a small bowl, whisk together the peanut butter, soy sauce, lime juice, honey, sriracha (if using), and coconut milk or water until smooth. Adjust the consistency by adding more coconut milk or water if needed.
  5. Stir-fry the vegetables: In the same skillet, add a bit more oil if necessary and stir-fry the bell pepper, carrot, and snap peas (or broccoli) for 3-4 minutes until just tender but still crisp.
  6. Assemble the noodles: Add the cooked noodles and chicken back into the skillet with the vegetables. Pour the peanut sauce over everything and toss to coat evenly. Cook for another 2-3 minutes until everything is heated through.
  7. Serve: Garnish the noodles with fresh cilantro or basil, sliced green onions, crushed peanuts, and lime wedges. Serve hot.

These Chicken Satay Noodles are a flavorful, quick, and satisfying dish perfect for any night of the week, combining the rich taste of peanut satay with tender chicken and fresh vegetables!
