The flavors meld together beautifully as the roll-ups bake, resulting in a dish that’s crispy on the outside, gooey on the inside, and bursting with the traditional Reuben taste that everyone loves.

Ingredients:

  • 4 boneless, skinless chicken breasts, pounded thin
  • 8 slices of corned beef or pastrami
  • 8 slices of Swiss cheese
  • 1 cup sauerkraut, drained and squeezed dry
  • 1/2 cup Thousand Island dressing
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Toothpicks (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
  2. Prepare the Chicken: Lay the pounded chicken breasts flat on a cutting board. Season both sides with garlic powder, onion powder, salt, and black pepper.
  3. Assemble the Roll-Ups: Spread a thin layer of Dijon mustard on each chicken breast. Layer 2 slices of corned beef or pastrami on top, followed by 2 slices of Swiss cheese. Add a spoonful of sauerkraut in the center of each chicken breast and drizzle with a little Thousand Island dressing.
  4. Roll and Secure: Carefully roll up each chicken breast, tucking in the sides as you go. Secure with toothpicks if needed to hold the roll-up together.
  5. Bake the Roll-Ups: Place the roll-ups in the prepared baking dish, seam side down. Brush the tops with olive oil. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the tops are golden brown.
  6. Garnish and Serve: Remove the toothpicks (if used) and let the roll-ups rest for a few minutes. Garnish with freshly chopped parsley. Serve hot, with extra Thousand Island dressing on the side for dipping.
