Chicken Pitas

Chicken pitas are a light yet satisfying meal that brings together the flavors of the Mediterranean in every bite. Ingredients:

  • 2 large chicken breasts, boneless and skinless
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • 4 pita breads
  • 1/2 cup tzatziki sauce or hummus
  • 1/2 cucumber, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 cup chopped lettuce
  • 1/2 cup cherry tomatoes, halved
  • Feta cheese, crumbled (optional)

Instructions:

  1. Preheat your grill or skillet to medium-high heat.
  2. Season the chicken breasts with olive oil, garlic powder, paprika, cumin, salt, and pepper.
  3. Grill or cook the chicken breasts for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F. Once cooked, remove from heat and let the chicken rest for a few minutes before slicing into thin strips.
  4. Warm the pita breads either on the grill for 1-2 minutes or in the microwave.
  5. To assemble, spread a generous layer of tzatziki sauce or hummus inside each pita. Add slices of the grilled chicken, followed by cucumber, red onion, lettuce, and cherry tomatoes. Sprinkle with crumbled feta if desired.
  6. Fold the pita in half or wrap it up for easy eating.
