Chicken Pesto Stuffed Peppers

Ingredients

  • 4 large bell peppers (any color)
  • 2 cups cooked chicken, shredded or diced
  • 1 cup pesto sauce (store-bought or homemade)
  • 1 cup cooked rice or quinoa
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Olive oil, for drizzling
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Drizzle a little olive oil over the peppers and season with salt and pepper. Place them in a baking dish.
  3. Mix the Filling: In a large bowl, combine the cooked chicken, pesto sauce, cooked rice or quinoa, and half of the mozzarella cheese. Mix well until all the ingredients are evenly coated with pesto. Season with salt and pepper to taste.
