Chicken Chili Nachos

Chicken Chili Nachos are the ultimate comfort food, perfect for game days, casual gatherings, or a fun family dinner. This recipe layers crispy tortilla chips with a hearty chicken chili, melting cheese, and all your favorite toppings, creating a flavorful and satisfying dish that’s sure to please a crowd. The combination of tender, spiced chicken, savory beans, and gooey cheese is irresistible, while the freshness of the toppings adds a burst of color and flavor. Ingredients:

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1/2 cup salsa
  • 1 packet taco seasoning
  • 1 bag tortilla chips
  • 2 cups shredded cheddar or Monterey Jack cheese
  • 1 jalapeño, sliced (optional)
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • Sour cream, guacamole, and salsa for serving

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, combine the shredded chicken, black beans, diced tomatoes with green chilies, salsa, and taco seasoning. Cook over medium heat, stirring occasionally, until the mixture is heated through and well combined, about 5-7 minutes.
  3. Spread a layer of tortilla chips on a large baking sheet or oven-safe platter. Spoon half of the chicken chili mixture over the chips, then sprinkle with half of the shredded cheese.
  4. Add another layer of tortilla chips on top, followed by the remaining chicken chili mixture and cheese. If you like it spicy, add sliced jalapeños on top.
  5. Bake in the preheated oven for 10-12 minutes, or until the cheese is fully melted and bubbly.
  6. Remove from the oven and immediately top with chopped green onions and fresh cilantro.
  7. Serve your Chicken Chili Nachos hot, with sour cream, guacamole, and extra salsa on the side for dipping.
