Chicken & Bean Chili

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeño, seeded and chopped (optional)
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (15-ounce) can tomato sauce
  • 1 cup chicken broth
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 2 tablespoons lime juice
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.
  2. Cook the Vegetables: In the same pot, add the onion, garlic, red and green bell peppers, and jalapeño (if using). Sauté for about 5 minutes, or until the vegetables are softened.
  3. Add the Spices: Stir in the chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for 1-2 minutes until the spices are fragrant.
  4. Simmer the Chili: Return the chicken to the pot. Add the diced tomatoes, tomato sauce, and chicken broth. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 20 minutes, stirring occasionally.
  5. Add the Beans and Corn: Stir in the black beans, kidney beans, and corn. Simmer uncovered for an additional 10-15 minutes, or until the chili has thickened to your desired consistency.
  6. Finish and Serve: Stir in the lime juice and adjust the seasoning with salt and pepper if needed. Serve hot, garnished with fresh cilantro.
