CHICKEN AND WHITE BEAN STEW

Ingredients:

  • 2 celery stalks, sliced
  • 1 can (15 oz) white beans (cannellini or great northern), drained and rinsed
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Sauté the chicken: Heat the olive oil in a large pot over medium heat. Season the chicken with salt and pepper, then add it to the pot. Cook until the chicken is browned on all sides, about 5-7 minutes. Remove the chicken and set aside.
  2. Cook the vegetables: In the same pot, add the chopped onion, carrots, and celery. Cook for 4-5 minutes, until softened. Stir in the minced garlic and cook for another minute until fragrant.
  3. Simmer the stew: Add the chicken back to the pot along with the white beans, chicken broth, thyme, and bay leaf. Bring the stew to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  4. Add lemon and season: Stir in the lemon juice and adjust seasoning with additional salt and pepper to taste. Remove the bay leaf before serving.
