It also pairs beautifully with roasted meats like pork or duck, offering a burst of sweetness that complements savory flavors. Made with fresh or frozen cherries, sugar, and a hint of lemon, this versatile sauce is quick and easy to prepare, adding a touch of elegance to any dish.

Ingredients:

  • 2 cups fresh or frozen cherries, pitted
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract (optional)
  • 1 tablespoon cornstarch (for thickening, optional)

Instructions:

  1. In a medium saucepan, combine the cherries, sugar, water, and lemon juice. Bring the mixture to a boil over medium heat, stirring occasionally.
  2. Reduce the heat to low and simmer for about 10-15 minutes, until the cherries release their juices and soften.
  3. If you prefer a thicker sauce, mix the cornstarch with 1 tablespoon of water to create a slurry. Slowly stir this into the sauce while it simmers, and cook for an additional 2-3 minutes until the sauce thickens.
  4. Remove from heat and stir in the vanilla extract, if using. Let the sauce cool slightly before serving.
