Cheesy Zucchini Gratin

Cheesy Zucchini Gratin is the perfect way to turn simple zucchini into a rich, indulgent dish. Layers of tender zucchini are smothered in a creamy cheese sauce, then baked until bubbly and golden. The combination of melted cheese and the slight sweetness of zucchini makes this gratin a comfort food classic that’s sure to be a crowd-pleaser. It’s an excellent side dish for any meal, especially when you’re looking to add something hearty but still veggie-packed to the table.

Ingredients:

  • 4 medium zucchinis, thinly sliced
  • 1 small onion, finely chopped
  • 2 tbsp butter
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.
  2. In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
  3. Stir in the garlic powder, dried thyme, salt, and pepper. Add the cream and bring to a simmer. Cook for 2-3 minutes until slightly thickened.
  4. Remove the skillet from heat and stir in the grated Parmesan and half of the mozzarella cheese until melted and smooth.
  5. Layer half of the sliced zucchini in the greased baking dish. Pour half of the cheese sauce over the zucchini, then repeat with the remaining zucchini and sauce.
  6. Sprinkle the breadcrumbs and remaining mozzarella cheese evenly on top.
  7. Bake for 25-30 minutes, or until the top is golden and the zucchini is tender.
  8. Garnish with fresh parsley before serving.

This gratin is best served hot, with its gooey, cheesy layers still warm and comforting!
