Ingredients:
- 4 medium zucchinis, thinly sliced
- 1 small onion, finely chopped
- 2 tbsp butter
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 tsp garlic powder
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 1/4 cup breadcrumbs
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.
- In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
- Stir in the garlic powder, dried thyme, salt, and pepper. Add the cream and bring to a simmer. Cook for 2-3 minutes until slightly thickened.
- Remove the skillet from heat and stir in the grated Parmesan and half of the mozzarella cheese until melted and smooth.
- Layer half of the sliced zucchini in the greased baking dish. Pour half of the cheese sauce over the zucchini, then repeat with the remaining zucchini and sauce.
- Sprinkle the breadcrumbs and remaining mozzarella cheese evenly on top.
