Charred Cabbage Skillet Gratin is a rustic and comforting dish that beautifully combines smoky, caramelized cabbage with a rich and creamy cheese sauce. The cabbage, when charred, takes on a deep, savory flavor that pairs perfectly with the crispy, golden breadcrumb topping. Ingredients:

  • 1 medium head of cabbage, cut into wedges
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 cup heavy cream
  • 1/2 cup grated Gruyère cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup seasoned breadcrumbs
  • 1 tbsp butter
  • 1 tsp Dijon mustard
  • 1/4 tsp smoked paprika
  • Fresh thyme leaves, for garnish (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C). Heat a large oven-safe skillet over medium-high heat and add the olive oil.
  2. Place the cabbage wedges in the skillet and sear for 3-4 minutes on each side, until nicely charred. Season with salt and pepper.
  3. In a small saucepan, heat the heavy cream with the Dijon mustard, smoked paprika, and half of the Gruyère and Parmesan cheese. Stir until the cheese melts and the sauce is smooth.
  4. Pour the cheese sauce over the charred cabbage in the skillet.
  5. In a small bowl, mix the breadcrumbs with the remaining cheese and butter. Sprinkle this mixture evenly over the top of the cabbage and sauce.
  6. Transfer the skillet to the oven and bake for 15-20 minutes, until the top is golden brown and bubbling.
  7. Garnish with fresh thyme leaves, if desired, and serve hot. Enjoy!
