Cauliflower Clam Chowder

Cauliflower Clam Chowder is a lighter, veggie-packed twist on the traditional creamy clam chowder. By substituting cauliflower for some of the potatoes, this version offers a subtle nuttiness and creamy texture without all the extra carbs. The combination of tender clams, savory broth, and the earthiness of cauliflower makes this a comforting yet healthier option. It’s a perfect meal for seafood lovers who are looking for something hearty but not too heavy, with all the classic chowder flavors you love.

Ingredients:

  • 2 tablespoons butter
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 celery stalk, diced
  • 1 large cauliflower head, cut into florets
  • 2 medium potatoes, peeled and diced
  • 4 cups clam juice or seafood broth
  • 2 (6.5 oz) cans of chopped clams with juice
  • 1 cup heavy cream or half-and-half
  • 1 teaspoon thyme
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Oyster crackers or crusty bread (for serving)

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the diced onion, garlic, and celery, and sauté until softened, about 5 minutes.
  2. Add the cauliflower florets and diced potatoes, stirring to combine with the vegetables.
  3. Pour in the clam juice or seafood broth, ensuring that the vegetables are fully submerged. Bring the mixture to a boil, then reduce the heat and simmer for about 15 minutes, or until the cauliflower and potatoes are tender.
  4. Using an immersion blender, blend about half of the chowder to create a creamy base while still leaving some chunks of vegetables for texture. Alternatively, you can transfer a portion to a blender and return it to the pot.
  5. Stir in the canned clams along with their juice, heavy cream, thyme, and smoked paprika. Simmer for another 5 minutes to heat the clams through and let the flavors meld.
  6. Season with salt and pepper to taste. If the chowder is too thick, you can add a little extra broth or water to adjust the consistency.
  7. Serve the cauliflower clam chowder hot, garnished with fresh parsley and paired with oyster crackers or crusty bread for dipping.

This Cauliflower Clam Chowder is a comforting and delicious way to enjoy a classic dish with a healthier, veggie-packed spin!
