Ingredients:

  • 1 medium head cauliflower, cut into florets

  • 1/4 cup nutritional yeast (or grated Parmesan cheese)

Instructions:

  1. Cook the Cauliflower:
    • In a large pot, bring the vegetable broth to a boil.
    • Add the cauliflower florets and cook until tender, about 10 minutes.
    • Drain the cauliflower, reserving some of the cooking liquid.
  2. Sauté the Aromatics:
    • In a large skillet, heat the olive oil over medium heat.
    • Add the chopped onion and sauté until translucent, about 5 minutes.
    • Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
  3. Blend the Sauce:
    • In a blender, combine the cooked cauliflower, sautéed onion and garlic, almond milk, nutritional yeast (or Parmesan cheese), lemon juice, salt, black pepper, and nutmeg (if using).
    • Blend until smooth and creamy, adding some of the reserved cooking liquid if needed to reach your desired consistency.
  4. Heat the Sauce:
    • Pour the blended cauliflower sauce back into the skillet and heat over medium-low heat until warmed through.
    • Adjust the seasoning to taste.
  5. Serve:
    • Toss the cauliflower Alfredo sauce with cooked pasta of your choice.
    • Garnish with freshly chopped parsley and additional Parmesan cheese, if desired.
