Carrot Puree

Carrot purée is a simple yet elegant side dish that highlights the natural sweetness and vibrant color of carrots. Ingredients:

  • 1 lb carrots, peeled and chopped
  • 2 tbsp unsalted butter
  • ¼ cup heavy cream (or milk for a lighter version)
  • Salt and pepper, to taste
  • Fresh herbs (optional, such as thyme or parsley)

Instructions:

  1. Steam the carrots: Place the peeled and chopped carrots in a steamer basket over boiling water. Cover and steam for about 10-12 minutes, or until the carrots are very tender and easily pierced with a fork.
