Ingredients:

For the Marinade:

  • 1-inch piece of ginger, grated
  • 2-3 Scotch bonnet peppers (adjust for heat preference), chopped
  • 1/4 cup soy sauce
  • 1/4 cup olive oil
  • 2 tablespoons white vinegar
  • Juice of 2 limes
  • Salt and pepper to taste

For the Chicken:

  • 4 chicken thighs (bone-in, skin-on)
  • 4 chicken drumsticks

Instructions:

  1. Prepare the Marinade: In a blender or food processor, combine all the marinade ingredients until smooth. Adjust salt and pepper to taste.
  2. Marinate the Chicken: Place the chicken in a large resealable plastic bag or bowl. Pour the marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the bowl and refrigerate for at least 4 hours, preferably overnight.
