Ingredients

  • 1/2 cup unsalted butter
  • 8 oz semi-sweet chocolate, chopped
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp instant espresso powder (or strong brewed coffee)
  • 1/2 cup all-purpose flour
  • 2 tbsp unsweetened cocoa powder
  • 1/4 tsp salt

For the cappuccino topping (optional):

  • 1/2 cup heavy cream
  • 1 tbsp instant espresso powder
  • 1/2 cup powdered sugar

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
  2. Melt the chocolate and butter: In a heatproof bowl, melt the butter and chopped chocolate together over a saucepan of simmering water (or microwave in 30-second intervals, stirring between each). Once smooth, remove from heat and let cool slightly.
  3. Mix the wet ingredients: Stir the granulated sugar and brown sugar into the melted chocolate mixture. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and espresso powder.
  4. Combine the dry ingredients: In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually fold the dry ingredients into the chocolate mixture until just combined.
  5. Bake the brownies: Pour the brownie batter into the prepared pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Let the brownies cool completely in the pan.
  6. Make the cappuccino topping (optional): While the brownies cool, whisk together the heavy cream, espresso powder, and powdered sugar until soft peaks form. Spread or dollop the cappuccino topping over the cooled brownies for an extra layer of coffee flavor.
  7. Serve: Cut the brownies into squares and serve. Enjoy with a cup of coffee or on their own for a rich, decadent treat.

These Cappuccino Brownies are a deliciously indulgent dessert that combines the richness of chocolate with the bold flavor of espresso, perfect for coffee and chocolate lovers alike!
