CACCIATORE CHICKEN BREAST

Cacciatore Chicken Breasts is a classic Italian dish that brings together tender chicken breasts simmered in a rich, savory tomato sauce with a medley of vegetables and aromatic herbs. “Cacciatore,” meaning “hunter” in Italian, refers to a rustic, hearty style of cooking that’s full of deep, robust flavors. This dish features chicken breasts cooked with onions, bell peppers, garlic, tomatoes, and mushrooms, all infused with the earthy notes of oregano, thyme, and a splash of red wine. The result is a comforting and flavorful meal that’s perfect for a cozy dinner. Serve it over pasta, rice, or with crusty bread to soak up the delicious sauce.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 large onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1/2 cup dry red wine (optional)
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 1/2 cup chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp crushed red pepper flakes (optional)
  • 2 tbsp capers (optional)
  • Fresh basil or parsley, chopped (for garnish)

Instructions:

  1. Prepare the Chicken:
    • Season the chicken breasts on both sides with salt and pepper.
  2. Sear the Chicken:
    • In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear them for about 4-5 minutes on each side, until golden brown. Remove the chicken from the skillet and set aside.
  3. Sauté the Vegetables:
    • In the same skillet, add the sliced onion and bell peppers. Sauté for about 5 minutes, until the vegetables are softened. Add the minced garlic and mushrooms, and cook for another 3-4 minutes until the mushrooms are tender.
  4. Deglaze with Wine:
    • If using, pour the red wine into the skillet to deglaze, scraping up any browned bits from the bottom of the pan. Let the wine simmer for 2-3 minutes to reduce slightly.
  5. Simmer the Sauce:
    • Add the diced tomatoes with their juice, chicken broth, oregano, thyme, and crushed red pepper flakes (if using) to the skillet. Stir to combine. Return the seared chicken breasts to the skillet, nestling them into the sauce. If using capers, add them now. Reduce the heat to low, cover, and let the chicken simmer in the sauce for 20-25 minutes, or until the chicken is cooked through and tender.
  6. Serve:
    • Once cooked, remove the skillet from heat and let the dish cool slightly. Garnish with fresh basil or parsley. Serve the Cacciatore Chicken Breasts over pasta, rice, or with crusty bread.

Cacciatore Chicken Breasts is a flavorful and comforting dish that’s perfect for a satisfying dinner. The combination of tender chicken, hearty vegetables, and a rich tomato sauce makes it a beloved classic that’s sure to please.
