Cabbage Roll Casserole

Cabbage Roll Casserole is a simplified version of the traditional stuffed cabbage rolls, offering all the same hearty flavors without the fuss of rolling. Layers of tender cabbage, seasoned ground beef, and rice are smothered in a rich tomato sauce, then baked to perfection. Ingredients:

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can tomato sauce
  • 1 (14.5 oz) can diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 2 cups cooked white rice
  • 1 medium head of cabbage, chopped
  • 1 cup shredded mozzarella or cheddar cheese

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onions are softened. Drain excess fat.
  3. Stir in the tomato sauce, diced tomatoes, tomato paste, paprika, oregano, thyme, salt, and pepper. Simmer for 10 minutes to let the flavors meld.
  4. In a large bowl, combine the cooked rice with the meat sauce.
  5. Grease a 9×13-inch baking dish. Spread half of the chopped cabbage in the bottom of the dish, followed by half of the meat and rice mixture. Repeat the layers.
  6. Cover the dish with foil and bake for 40 minutes.
  7. Remove the foil, sprinkle the cheese on top, and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  8. Let the casserole rest for 10 minutes before serving.
