Cabbage Barley Soup

Ingredients:

  • 1 small head of cabbage, chopped
  • 1 cup pearl barley
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 8 cups vegetable or chicken broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish (optional)

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the onion, carrots, celery, and garlic, and sauté until softened, about 5 minutes.
  2. Add the chopped cabbage, stirring for another 2-3 minutes until it starts to wilt.
  3. Stir in the pearl barley, dried thyme, bay leaf, salt, and pepper.
  4. Pour in the broth and bring the soup to a boil. Reduce the heat to low, cover, and let it simmer for 40-50 minutes, or until the barley is tender.
  5. Adjust seasoning to taste, and remove the bay leaf.
  6. Garnish with fresh parsley if desired and serve hot.
