Buttermilk-Mushroom Pork Chops

Buttermilk-Mushroom Pork Chops are a flavorful and comforting dish that combines tender, juicy pork chops with a rich, creamy mushroom sauce. The buttermilk marinade adds a subtle tanginess to the pork, making it incredibly tender, while the mushrooms and garlic in the sauce provide a savory, earthy depth of flavor. This dish is perfect for a cozy family dinner, served with mashed potatoes or rice to soak up the delicious sauce.

Ingredients:

  • 4 bone-in pork chops
  • 1 cup buttermilk
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 8 oz mushrooms, sliced
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Marinate the pork chops: In a large bowl or resealable bag, combine the buttermilk, Dijon mustard, salt, and pepper. Add the pork chops and marinate in the refrigerator for at least 1 hour, or up to overnight for best results.
  2. Cook the pork chops: Remove the pork chops from the marinade and pat them dry. In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and cook for 4-5 minutes per side, or until browned and cooked through. Remove the pork chops from the skillet and set aside.
  3. Sauté the mushrooms and onions: In the same skillet, melt the butter over medium heat. Add the sliced mushrooms and onions, and cook for 5-6 minutes until softened and browned. Add the garlic and cook for another 1 minute until fragrant.
  4. Make the sauce: Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Stir in the heavy cream and thyme, and let the sauce simmer for 3-4 minutes until slightly thickened. Season with salt and pepper to taste.
  5. Return the pork chops: Return the pork chops to the skillet, spoon the mushroom sauce over them, and let everything simmer together for 2-3 minutes to warm through.
  6. Serve: Garnish the pork chops with fresh parsley and serve with your favorite side dish.

Enjoy your Buttermilk-Mushroom Pork Chops as a hearty and flavorful meal that’s sure to impress!
