Ingredients:

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • Salt and pepper, to taste
  • 1 cup buttermilk
  • Vegetable oil, for frying

For the buffalo sauce:

  • 1/2 cup hot sauce (such as Frank’s RedHot)
  • 1/4 cup unsalted butter, melted
  • 1 tbsp honey or brown sugar (optional, for a touch of sweetness)

For serving:

  • Ranch or blue cheese dressing
  • Celery sticks

Instructions:

  1. In a medium bowl, whisk together the flour, garlic powder, paprika, cayenne pepper, salt, and pepper.
  2. Pour the buttermilk into a separate bowl.
  3. Dip the chicken pieces into the buttermilk, then dredge them in the seasoned flour, shaking off any excess.
  4. Heat about 1 inch of vegetable oil in a deep skillet over medium-high heat. Once the oil is hot, fry the chicken in batches for 5-6 minutes, or until golden brown and cooked through. Drain on a paper towel-lined plate.
  5. In a small saucepan, combine the hot sauce, melted butter, and honey (if using). Heat over low heat until well mixed.
