Ingredients:

For the Crepes:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups milk
  • 2 tablespoons melted butter
  • 1/4 teaspoon salt

For the Filling:

  • 2 cups broccoli florets, steamed and chopped
  • 1 tablespoon butter
  • 1 clove garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup ricotta cheese
  • Salt and black pepper, to taste

For Topping:

  • 1/2 cup shredded cheddar cheese
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Prepare the Crepe Batter:
    • In a mixing bowl, whisk together the flour, eggs, milk, melted butter, and salt until smooth. Cover and let the batter rest for about 30 minutes to allow the bubbles to settle.
  2. Cook the Crepes:
    • Heat a non-stick skillet over medium heat. Lightly grease with butter or oil. Pour about 1/4 cup of the crepe batter into the skillet, tilting the pan to spread the batter evenly. Cook for 1-2 minutes, until the edges start to lift and the crepe is lightly browned. Flip and cook for another 30 seconds. Repeat with the remaining batter, stacking crepes on a plate.
  3. Prepare the Filling:
    • In a skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the steamed and chopped broccoli, cooking for another 2 minutes. Remove from heat and stir in the shredded cheddar cheese and ricotta cheese. Season with salt and black pepper to taste.
  4. Fill and Roll the Crepes:
    • Preheat your oven to 350°F (175°C). Place a spoonful of the broccoli cheese filling down the center of each crepe, then roll them up. Arrange the filled crepes in a greased baking dish.
  5. Top and Bake:
    • Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top of the filled crepes. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Remove the crepes from the oven and garnish with chopped fresh parsley, if desired. Serve warm, either on their own or with a side salad.

Broccoli Cheese Crepes are a versatile and delicious way to enjoy a savory meal that’s both light and filling. The combination of tender crepes, cheesy broccoli filling, and a golden topping makes this dish a comforting and delightful choice for any occasion.
