Bratwurst Soup

  • 4 cups chicken or beef broth
  • 2 cups water
  • 4 medium potatoes, peeled and cubed
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Brown the bratwurst:
    • In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the sliced bratwurst and cook until browned, about 5-7 minutes. Remove the bratwurst from the pot and set aside.
  2. Sauté the vegetables:
    • In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes, until the vegetables are softened. Add the minced garlic and cook for another 1-2 minutes, until fragrant.
  3. Add the liquids and seasonings:
    • Pour in the chicken or beef broth and water, stirring to combine. Add the cubed potatoes, diced tomatoes (with their juice), dried thyme, dried rosemary, bay leaf, and browned bratwurst. Stir well to combine all the ingredients.
  4. Simmer the soup:
    • Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for about 30-40 minutes, or until the potatoes are tender and the flavors have melded together. Stir occasionally to prevent sticking.
