Instructions:
- Sear the Chicken: Season the chicken thighs generously with salt and pepper. Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Sear the chicken thighs, skin-side down, for about 5 minutes until golden brown. Flip and cook for another 3 minutes. Remove the chicken from the pot and set aside.
