Ingredients:

  • For the Cake:
    • 1 1/2 cups all-purpose flour

    • 1 tsp vanilla extract
  • For the Pastry Cream:
    • 2 cups whole milk
    • 1/2 cup granulated sugar
    • 4 large egg yolks
    • 1/4 cup cornstarch
    • 2 tbsp unsalted butter
    • 1 tsp vanilla extract
  • For the Chocolate Ganache:
    • 1 cup heavy cream
    • 8 oz semisweet chocolate, chopped
    • 1 tbsp unsalted butter

Instructions:

  1. Make the Cake:
    • Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
    • Prepare Batter: In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla extract. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
    • Bake: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  2. Make the Pastry Cream:
    • Heat Milk: In a medium saucepan, heat the milk over medium heat until it begins to steam, but not boil.
    • Whisk Yolks: In a bowl, whisk together the sugar, egg yolks, and cornstarch until smooth. Gradually add a small amount of the hot milk to the yolk mixture, whisking constantly to temper. Return the mixture to the saucepan with the remaining milk.
    • Cook Cream: Cook over medium heat, whisking constantly, until the mixture thickens and begins to bubble. Remove from heat and stir in the butter and vanilla extract. Transfer to a bowl, cover with plastic wrap (pressing it directly onto the surface of the cream to prevent a skin from forming), and refrigerate until chilled.
  3. Make the Ganache:
    • Heat Cream: In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add the chopped chocolate. Let it sit for a few minutes, then stir until smooth. Stir in the butter until the ganache is glossy. Let it cool slightly before using.
  4. Assemble the Cake:
    • Layer Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread the chilled pastry cream evenly over the top. Place the second cake layer on top of the cream.
    • Add Ganache: Pour the chocolate ganache over the top of the cake, allowing it to drip down the sides. Smooth the ganache with a spatula if needed.
  5. Serve: Allow the cake to set for at least an hour before slicing to let the ganache firm up. Serve and enjoy!
