Ingredients:

  • 4 bratwurst sausages, sliced into rounds
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (6 ounces) tomato paste
  • 1 bottle (12 ounces) beer (lager or ale works well)
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional, for extra heat)
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup shredded cheddar cheese (optional, for topping)
  • Sour cream, chopped green onions, and fresh cilantro, for garnish

Instructions:

  1. Cook the Bratwurst:
    • In a large pot or Dutch oven, heat the olive oil over medium-high heat.
    • Add the sliced bratwurst sausages and cook until browned on all sides, about 5-7 minutes. Remove the bratwurst from the pot and set aside.
  2. Sauté the Vegetables:
    • In the same pot, add the chopped onion and green bell pepper. Sauté for 4-5 minutes until the vegetables are softened.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
  3. Build the Chili:
    • Stir in the diced tomatoes, tomato paste, kidney beans, black beans, and beer.
    • Add the chili powder, ground cumin, smoked paprika, cayenne pepper (if using), salt, and black pepper.
    • Return the browned bratwurst to the pot, stirring to combine all the ingredients.
  4. Simmer the Chili:
    • Bring the mixture to a boil, then reduce the heat to low.
    • Cover and simmer the chili for 30-40 minutes, stirring occasionally, until the flavors have melded together and the chili has thickened.
  5. Serve:
    • Ladle the Beer Brat Chili into bowls.
    • Top with shredded cheddar cheese, a dollop of sour cream, chopped green onions, and fresh cilantro, if desired.

Enjoy your rich and flavorful Beer Brat Chili, a perfect dish for a cozy evening or a crowd-pleasing game day meal!
