Beefy Mushroom Soup

This comforting Beefy Mushroom Soup is a hearty, flavorful dish perfect for chilly days or when you’re craving a warm, filling meal. Ingredients:

  • 1 lb beef stew meat, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced (button, cremini, or a mix)
  • 4 cups beef broth
  • 1 cup water
  • 2 tbsp Worcestershire sauce
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • 1 bay leaf
  • Salt and pepper to taste
  • 1/4 cup flour (optional, for a thicker soup)
  • 1/4 cup cold water (optional, for mixing with flour)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Brown the Beef: Heat the olive oil in a large pot over medium heat. Add the beef stew meat and cook until browned on all sides. Remove the beef from the pot and set it aside.
  2. Sauté the Aromatics: In the same pot, add the chopped onion and garlic. Sauté until the onion is soft and translucent, about 5 minutes.
  3. Cook the Mushrooms: Add the sliced mushrooms to the pot and cook until they release their moisture and start to brown, about 7-10 minutes.
  4. Combine Ingredients: Return the browned beef to the pot. Add the beef broth, water, Worcestershire sauce, thyme, bay leaf, salt, and pepper. Stir to combine.
  5. Simmer: Bring the soup to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the beef is tender.
  6. Optional Thickening: If you prefer a thicker soup, whisk the flour with cold water to create a slurry. Gradually stir the slurry into the simmering soup, cooking for an additional 5-10 minutes until the soup thickens.
