BEEF ENCHILADA LASAGNA CASSEROLE

Beef Enchilada Lasagna Casserole is a fusion of two beloved dishes, blending the rich, hearty layers of lasagna with the bold, zesty flavors of beef enchiladas. Ingredients:

  • 1 lb ground beef
  • 1 small onion, diced

  • 10 small corn or flour tortillas, cut in half

Instructions:

  1. Preheat the oven: Set your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the beef: In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat. Add the diced onion and garlic to the skillet and cook for another 3-4 minutes until softened.
  3. Add seasonings and sauce: Stir in the enchilada sauce, diced tomatoes with green chilies, cumin, chili powder, salt, and pepper. Let the mixture simmer for 5 minutes to blend the flavors.

  5. Bake: Cover the dish with foil and bake for 25-30 minutes, or until the cheese is melted and bubbly. Remove the foil during the last 5 minutes of baking for a crispy top.
