Ingredients:

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 (15-ounce) can diced tomatoes
  • 1 (15-ounce) can tomato sauce
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 packet (1 ounce) taco seasoning mix
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup water or beef broth

Optional Toppings:

  • Shredded cheese
  • Sour cream
  • Chopped cilantro
  • Diced avocado
  • Sliced jalapeños
  • Lime wedges

Instructions:

  1. Cook the Beef: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  2. Sauté Vegetables: Add the chopped onion, garlic, and bell pepper to the pot. Sauté for about 5 minutes, or until the vegetables are softened.
  3. Add Tomatoes and Beans: Stir in the diced tomatoes, tomato sauce, black beans, kidney beans, and corn. Mix well.
  4. Season the Chili: Add the taco seasoning, chili powder, cumin, salt, and black pepper. Stir to combine.
  5. Simmer: Pour in the water or beef broth and bring the mixture to a boil. Reduce the heat to low and let it simmer for 30 minutes, stirring occasionally to prevent sticking.
  6. Adjust Seasoning: Taste and adjust the seasoning as needed.
  7. Serve: Ladle the chili into bowls and top with your choice of toppings such as shredded cheese, sour cream, chopped cilantro, diced avocado, sliced jalapeños, or a squeeze of lime juice.
