BBQ Beef Stuffed Peppers

Ingredients:

  • 4 large bell peppers (any color)
  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup barbecue sauce
  • 1 cup cooked rice
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the peppers: Slice the tops off the bell peppers and remove the seeds and membranes. If needed, trim the bottoms slightly so the peppers stand upright. Place the peppers in a baking dish.
  3. Cook the filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the garlic and cook for another minute until fragrant. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  4. Add the sauce: Stir in the barbecue sauce and cooked rice, mixing until everything is well combined. Season with salt and pepper to taste.
  5. Stuff the peppers: Spoon the beef mixture into each of the prepared bell peppers, packing it down slightly. Top each pepper with a mix of cheddar and mozzarella cheeses.
  6. Bake: Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
