Banana Chip Muffins

Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  • 3 ripe bananas, mashed
  • ¾ cup sugar
  • 1 egg, lightly beaten

  • 1 teaspoon vanilla extract
  • ½ cup mini chocolate chips (or regular chocolate chips)
  • Optional: ½ cup chopped walnuts for added crunch

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease the tin.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, combine the mashed bananas, sugar, egg, melted butter, and vanilla extract. Stir until well blended.
  4. Gradually add the dry ingredients to the banana mixture, stirring just until combined. Do not overmix.
  5. Fold in the chocolate chips (and walnuts if using) until evenly distributed.
