Ingredients:

  • 1 whole turkey (12-14 pounds), thawed and cleaned
  • 1 pound bacon
  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh sage, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 lemon, quartered
  • 1 onion, quartered
  • 2 cups chicken broth

Instructions:

  1. Prepare the Turkey:
    • Preheat your oven to 325°F (165°C).
    • Pat the turkey dry with paper towels and place it on a rack in a large roasting pan.
  2. Make the Herb Butter:
    • In a small bowl, combine the softened butter, minced garlic, thyme, rosemary, sage, salt, and black pepper.
  3. Season the Turkey:
    • Carefully loosen the skin of the turkey breast by gently sliding your hand under the skin.
    • Rub half of the herb butter mixture under the skin and the other half all over the outside of the turkey.
  4. Stuff the Turkey:
    • Place the lemon quarters and onion quarters inside the cavity of the turkey.
  5. Wrap the Turkey with Bacon:
    • Starting at the neck of the turkey, lay strips of bacon over the breast, overlapping slightly to cover the entire breast and top of the drumsticks.
    • Tuck any remaining bacon pieces into the sides of the turkey.
  6. Roast the Turkey:
    • Pour the chicken broth into the bottom of the roasting pan.
    • Cover the turkey loosely with aluminum foil and place it in the preheated oven.
    • Roast for about 3 hours, basting occasionally with the pan juices. Remove the foil during the last 30-45 minutes of roasting to allow the bacon to become crispy.
    • The turkey is done when it reaches an internal temperature of 165°F (74°C) in the thickest part of the thigh and breast.
  7. Rest and Serve:
    • Remove the turkey from the oven and let it rest for 20-30 minutes before carving.
    • Transfer the turkey to a serving platter and garnish with additional fresh herbs if desired.

Enjoy your succulent and flavorful Bacon Wrapped Turkey!
