Ingredients:
- 4 large russet potatoes, scrubbed clean
- 4 tablespoons olive oil
- Salt and pepper, to taste
- 1 ½ cups shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- ½ cup sour cream
- 2 tablespoons chopped chives (for garnish)
Instructions:
- Preheat your oven to 400°F (200°C). Prick the potatoes several times with a fork and rub them with 2 tablespoons of olive oil. Place the potatoes on a baking sheet and bake for 45–50 minutes, or until tender when pierced with a fork. Allow them to cool slightly.
- Once cool enough to handle, slice each potato in half lengthwise. Scoop out the insides, leaving about ¼ inch of potato flesh around the edges.
- Brush the inside and outside of the potato skins with the remaining olive oil, then season with salt and pepper.
- Place the potato halves cut-side down on the baking sheet and bake for 10 minutes. Flip them over and bake for another 10 minutes until the skins are crispy.
- Remove the potato skins from the oven and sprinkle them with shredded cheddar cheese and crumbled bacon. Return to the oven and bake for an additional 5–7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top each potato skin with a dollop of sour cream and a sprinkle of chopped chives.
