Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1/2 cup cold unsalted butter, cubed
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup cooked bacon, crumbled (about 4-5 slices)
  • 3/4 cup buttermilk (plus more if needed)
  • 2 tablespoons fresh chives or green onions, chopped (optional)
  • 1 large egg, beaten (for brushing)

Instructions:

  1. Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, and garlic powder, if using.
  3. Cut in the Butter: Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs with some larger pea-sized pieces of butter.
  4. Add Cheese and Bacon: Stir in the shredded cheddar cheese, crumbled bacon, and chopped chives or green onions (if using) until evenly distributed.
  5. Add Buttermilk: Make a well in the center of the dry ingredients and pour in the buttermilk. Stir until the dough comes together. If the dough is too dry, add a bit more buttermilk, a tablespoon at a time.
  6. Knead and Shape: Turn the dough out onto a lightly floured surface and knead gently a few times to bring it together. Pat the dough into a circle or rectangle about 1 inch thick.
  7. Cut Biscuits: Use a biscuit cutter or a glass to cut out biscuits. Press straight down without twisting to ensure the biscuits rise properly. Place the biscuits on the prepared baking sheet.
  8. Brush and Bake: Brush the tops of the biscuits with the beaten egg for a golden finish. Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown and cooked through.
  9. Cool: Allow the biscuits to cool on the baking sheet for a few minutes before transferring to a wire rack.

Serve these Bacon Cheddar Biscuits warm from the oven with a pat of butter, and enjoy their rich, savory flavor any time of the day!
