Ingredients
- 1 pound fresh spinach, washed and trimmed
- 8 ounces paneer, cut into cubes
- 2 tablespoons ghee or vegetable oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1-2 green chilies, finely chopped (adjust to taste)
- 1 teaspoon cumin seeds
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon garam masala
- 1/2 teaspoon cayenne pepper (optional, for heat)
- 1/4 cup heavy cream or yogurt
- Salt, to taste
- Lemon wedges, for serving
- Fresh cilantro, chopped (for garnish)
Instructions
- Blanch the spinach: Bring a large pot of water to a boil. Add the spinach and blanch for 1-2 minutes until wilted. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Once cooled, drain again and puree the spinach in a blender or food processor until smooth. Set aside.
- Fry the paneer: In a large skillet, heat 1 tablespoon of ghee or oil over medium heat. Add the paneer cubes and fry until golden brown on all sides, about 5 minutes. Remove from the skillet and set aside.
- Sauté the aromatics: In the same skillet, add the remaining ghee or oil. Add the cumin seeds and let them sizzle for a few seconds. Add the chopped onion and sauté until golden brown, about 5-7 minutes. Stir in the minced garlic, grated ginger, and chopped green chilies, and cook for another 2 minutes.
- Add the spices: Add the ground coriander, turmeric, garam masala, and cayenne pepper (if using) to the skillet. Stir well and cook for 1-2 minutes until the spices are fragrant.
- Combine spinach and paneer: Add the pureed spinach to the skillet and stir to combine with the spice mixture. Cook for 3-4 minutes until the spinach is heated through. Stir in the heavy cream or yogurt and season with salt to taste. Add the fried paneer cubes and gently mix them into the saag, cooking for an additional 2-3 minutes to heat through.
- Serve: Remove the skillet from the heat and garnish with fresh cilantro. Serve the Saag Paneer with lemon wedges on the side, along with naan or basmati rice.
Enjoy your Authentic Saag Paneer as a delicious and nutritious vegetarian dish that brings the rich flavors of India to your table, perfect for any occasion.
