Apple Raisin Cake

Ingredients:

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • ½ cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 large apples, peeled, cored, and chopped
  • 1 cup raisins
  • ½ cup milk
  • ½ cup chopped walnuts (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round or square baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, cream the butter and sugar together until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Add the dry ingredients to the butter mixture in batches, alternating with the milk, starting and ending with the dry ingredients. Mix just until combined.
  5. Fold in the chopped apples and raisins, and walnuts if using, until evenly distributed throughout the batter.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Serve warm or at room temperature. Optional: dust with powdered sugar before serving or serve with a dollop of whipped cream.
