AIR FRYER COCONUT SHRIMP

Air Fryer Coconut Shrimp is a delightful and crispy dish that brings a taste of the tropics right to your kitchen. These shrimp are coated in a crunchy mixture of shredded coconut and panko breadcrumbs, then air-fried to golden perfection without the need for deep frying. The result is a light, crispy exterior with juicy, tender shrimp inside. Perfect as an appetizer, snack, or even a main course, this dish is both delicious and healthier than traditional fried shrimp. Serve it with a sweet chili dipping sauce or a tangy pineapple salsa for a refreshing burst of flavor that complements the coconut crust beautifully.

Ingredients:

  • 1 lb large shrimp, peeled and deveined, tails on
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1 cup shredded sweetened coconut
  • 1/2 cup panko breadcrumbs
  • Cooking spray
  • Lime wedges (for serving)

For the Dipping Sauce (optional):

  • 1/2 cup sweet chili sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon soy sauce

Instructions:

  1. Prepare the Coating:
    • In a shallow bowl, combine the flour, salt, and black pepper. In a separate bowl, beat the eggs. In a third bowl, mix together the shredded coconut and panko breadcrumbs.
  2. Coat the Shrimp:
    • Dredge each shrimp in the flour mixture, shaking off any excess. Dip the shrimp into the beaten eggs, then press it into the coconut-panko mixture, ensuring it’s fully coated. Repeat with all the shrimp.
  3. Air Fry the Shrimp:
    • Preheat your air fryer to 375°F (190°C) for 3 minutes. Lightly spray the air fryer basket with cooking spray. Arrange the shrimp in a single layer in the basket, making sure they don’t overlap (you may need to cook in batches).
    • Lightly spray the tops of the shrimp with cooking spray. Air fry for 7-10 minutes, or until the shrimp are golden brown and crispy, flipping halfway through the cooking time.
  4. Make the Dipping Sauce (Optional):
    • In a small bowl, whisk together the sweet chili sauce, lime juice, honey, and soy sauce. Adjust the flavors to your liking.
  5. Serve:
    • Serve the Air Fryer Coconut Shrimp hot with lime wedges and the dipping sauce on the side.

Enjoy this Air Fryer Coconut Shrimp as a deliciously crunchy and tropical dish that’s perfect for any occasion!
