Ingredients:

  • 1 lb pork shoulder, cut into small cubes
  • 1 cup green enchilada sauce
  • 1 can (4 oz) diced green chiles
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp oregano
  • Salt and pepper, to taste
  • 4 large flour tortillas
  • 1 cup shredded Monterey Jack cheese

Instructions:

  1. Cook the Pork:
    • In a large skillet, heat a bit of oil over medium heat. Add the chopped onion and garlic, sautéing until softened.
    • Add the pork cubes, cooking until browned on all sides.
    • Stir in the green enchilada sauce, diced green chiles, cumin, oregano, salt, and pepper.
    • Reduce heat to low, cover, and simmer for about 45 minutes to 1 hour, until the pork is tender and the flavors are well combined.
