Ingredients:

  • 2 tablespoons olive oil
  • 1 1/2 pounds beef stew meat, cut into 1-inch cubes
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 red bell peppers, chopped
  • 2 green bell peppers, chopped
  • 3 carrots, sliced
  • 2 tablespoons tomato paste
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups beef broth
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and freshly ground black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Brown the Beef:
    • In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat in batches, browning it on all sides. Remove the beef from the pot and set it aside.
  2. Sauté the Vegetables:
    • In the same pot, add the chopped onion and garlic, sautéing until the onion is softened and translucent, about 5 minutes. Stir in the chopped red and green bell peppers and carrots, cooking for another 5 minutes until they begin to soften.
  3. Add the Tomato Paste and Spices:
    • Stir in the tomato paste, smoked paprika, thyme, oregano, and bay leaf, cooking for 1-2 minutes to let the flavors develop.
  4. Simmer the Stew:
    • Return the browned beef to the pot. Add the diced tomatoes and beef broth, stirring to combine. Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let the stew simmer gently for 1 1/2 to 2 hours, or until the beef is tender and the flavors have melded together.
  5. Season and Serve:
    • Remove the bay leaf and season the stew with salt and freshly ground black pepper to taste. Garnish with fresh parsley if desired, and serve hot with crusty bread or over rice.

One-Pot Beef & Pepper Stew is a hearty, flavorful dish that’s perfect for a cozy dinner. The combination of tender beef and sweet peppers simmered in a rich broth makes this stew a comforting and satisfying meal that’s easy to prepare and full of warmth.
