Butternut Pork Chop

This Butternut Pork Chop recipe is a delightful fusion of sweet and savory flavors, perfect for a cozy dinner. The pork chops are pan-seared to a golden brown, locking in their juices, and then paired with tender butternut squash that has been roasted to bring out its natural sweetness. The dish is finished with a touch of sage and a drizzle of honey, creating a comforting meal that’s both elegant and satisfying. The combination of the hearty pork and the slightly caramelized squash makes this dish a winner for any fall or winter evening.

Ingredients:

  • 4 boneless pork chops, about 1 inch thick
  • 1 medium butternut squash, peeled, seeded, and cut into 1-inch cubes
  • 2 tablespoons olive oil, divided
  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)
  • 2 tablespoons honey
  • Salt and pepper, to taste

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Roast Butternut Squash: In a large mixing bowl, toss the butternut squash cubes with 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until the squash is tender and slightly caramelized.
  3. Prepare Pork Chops: While the squash is roasting, heat the remaining 1 tablespoon of olive oil and the butter in a large skillet over medium-high heat. Season the pork chops with salt and pepper on both sides.
  4. Cook Pork Chops: Add the pork chops to the skillet and cook for about 4-5 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 145°F/63°C). Remove the pork chops from the skillet and set aside to rest.
  5. Sauté Onion and Garlic: In the same skillet, add the chopped onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
  6. Combine and Finish: Add the roasted butternut squash and sage to the skillet with the onion and garlic. Stir to combine and cook for 2-3 minutes to let the flavors meld together. Drizzle the honey over the squash mixture and stir.
  7. Serve: Plate the pork chops and top with the butternut squash mixture. Serve immediately, garnished with additional fresh sage if desired.

Enjoy your comforting Butternut Pork Chops!
