Ingredients:
- 1 tablespoon olive oil
- 1 small onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 zucchini, thinly sliced
- 1/2 cup corn kernels (fresh or frozen)
- 1/2 teaspoon cumin
- Salt and pepper, to taste
- 4 flour tortillas
- 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- Salsa, guacamole, and sour cream for serving
Instructions:
- Heat olive oil in a large skillet over medium heat. Add the onion, bell pepper, and zucchini, and sauté for about 5-6 minutes until the vegetables are soft and slightly caramelized.
