Vegetable Quesadillas

Vegetable Quesadillas are a flavorful and satisfying dish that’s perfect for a quick and healthy meal. Packed with sautéed vegetables like bell peppers, onions, and zucchini, these quesadillas offer a deliciously crispy exterior with a gooey, cheesy filling. Ingredients:

  • 1 tablespoon olive oil
  • 1 small onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 zucchini, thinly sliced
  • 1/2 cup corn kernels (fresh or frozen)
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • 4 flour tortillas
  • 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • Salsa, guacamole, and sour cream for serving

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add the onion, bell pepper, and zucchini, and sauté for about 5-6 minutes until the vegetables are soft and slightly caramelized.
  2. Stir in the corn, cumin, salt, and pepper, and cook for another 2 minutes. Remove the vegetables from the skillet and set aside.
  3. In the same skillet, place one tortilla and sprinkle a layer of shredded cheese on half of the tortilla. Add a portion of the sautéed vegetables on top of the cheese, then fold the tortilla in half.
  4. Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  5. Repeat with the remaining tortillas and vegetable mixture.
  6. Slice the quesadillas into wedges and serve with salsa, guacamole, and sour cream.
