Air Fryer Salmon Croquettes

Air Fryer Salmon Croquettes are a healthier take on the classic southern dish, with the perfect balance of crispy outside and tender, flavorful inside. These croquettes are made with fresh or canned salmon, seasoned with herbs and spices, and then air-fried to golden perfection. The air fryer allows you to achieve that satisfying crunch without the excess oil from traditional frying, making these croquettes a lighter option for lunch or dinner. Serve them with a simple dipping sauce or over a fresh salad for a wholesome meal.

Ingredients:

  • 1 can (6-7 oz) salmon, drained and flaked (or 6 oz cooked fresh salmon)
  • 1/4 cup breadcrumbs
  • 1 egg, lightly beaten
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon chopped fresh parsley
  • 1 small green onion, finely chopped
  • 1 teaspoon lemon juice
  • Salt and pepper, to taste
  • Cooking spray (for air fryer)

Instructions:

  1. Preheat your air fryer to 375°F (190°C).
  2. In a medium bowl, mix together the flaked salmon, breadcrumbs, beaten egg, mayonnaise, Dijon mustard, parsley, green onion, and lemon juice. Season with salt and pepper to taste.
  3. Form the mixture into small patties, about 2-3 inches in diameter.
  4. Lightly spray the air fryer basket with cooking spray and place the croquettes in a single layer.
  5. Spray the tops of the croquettes lightly with cooking spray as well.
  6. Air fry the croquettes for 10-12 minutes, flipping halfway through, until they are golden brown and crispy.
  7. Remove from the air fryer and serve hot with your favorite dipping sauce or a lemon wedge.
