  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (13.5 oz) coconut milk
  • 1 cup beef broth
  • 2 medium carrots, sliced
  • 1 large potato, peeled and cubed
  • Salt and pepper, to taste
  • Fresh cilantro, chopped, for garnish
  • Cooked rice or flatbread, for serving

Instructions:

  1. Prepare the beef: In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef stew meat and brown on all sides. Remove the beef from the pot and set aside.
  2. Cook the aromatics: In the same pot, add the chopped onion and sauté until it becomes translucent, about 5 minutes. Add the minced garlic and grated ginger, and cook for another minute until fragrant.
  3. Add the spices: Stir in the curry powder, ground cumin, ground coriander, and cayenne pepper (if using). Cook for 1-2 minutes, allowing the spices to toast and become aromatic.
