Instructions:

  1. Activate the Yeast:
    • In a small bowl, dissolve the honey in warm water.

  2. Mix the Dough:
    • In a large mixing bowl, combine the whole wheat flour, all-purpose flour, and salt.
    • Make a well in the center and pour in the yeast mixture and olive oil.
    • Mix until a rough dough forms.
  3. Knead the Dough:
    • Transfer the dough onto a floured surface.
    • Knead the dough for about 8-10 minutes until it becomes smooth and elastic.
    • If the dough is too sticky, add a little more flour, one tablespoon at a time.
  4. First Rise:
    • Place the dough in a lightly oiled bowl, turning it to coat the dough with oil.
    • Cover the bowl with a clean kitchen towel or plastic wrap.
    • Let the dough rise in a warm, draft-free place for about 1-1.5 hours, or until it has doubled in size.
  5. Shape the Loaves:
    • Punch down the dough to release the air.
    • Divide the dough in half and shape each portion into a long loaf, about 12 inches long.
    • Place the loaves on a baking sheet lined with parchment paper.
  6. Second Rise:
    • Cover the loaves with a kitchen towel and let them rise for another 30-45 minutes, or until they have doubled in size.
  7. Preheat the Oven:
    • Preheat your oven to 425°F (220°C).
    • Place a shallow pan of water on the bottom rack of the oven to create steam, which will help develop a crispy crust.
  8. Bake the Bread:
    • Using a sharp knife, make 3-4 diagonal slashes across the top of each loaf.
