- 1 lb (450g) sausage (chorizo, Italian, or breakfast sausage)
- 8 large flour tortillas

- 1 small onion, finely chopped
- 1 bell pepper, finely chopped
- 1 clove garlic, minced
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt and pepper, to taste
- Fresh cilantro, chopped (optional)
- Salsa, sour cream, or guacamole for serving
Instructions:
- Cook the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sausage, breaking it up with a spoon as it cooks. Cook until browned and fully cooked through, about 8-10 minutes. Remove the sausage from the skillet and set aside, leaving a bit of the grease in the pan.
- Sauté the Vegetables: In the same skillet, add the chopped onion, bell pepper, and garlic. Sauté until the vegetables are soft and the onion is translucent, about 5 minutes.
