Kielbasa Hot Potato Slaw

Ingredients:

  • 1 lb (450g) kielbasa sausage, sliced
  • 4 medium-sized potatoes, diced
  • 1/2 head green cabbage, thinly sliced
  • 1 small red onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Cook the Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook for 8-10 minutes, or until just tender. Drain and set aside.
  2. Cook the Kielbasa: While the potatoes are cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced kielbasa and cook until browned on both sides, about 5-7 minutes. Remove from the skillet and set aside.
  3. Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Sauté the sliced red onion and minced garlic for 2-3 minutes, until softened and fragrant. Add the sliced cabbage and cook for another 5 minutes, stirring occasionally, until the cabbage starts to soften.
  4. Combine Ingredients: Return the cooked potatoes and kielbasa to the skillet with the vegetables. Stir to combine all the ingredients.
  5. Make the Dressing: In a small bowl, whisk together the apple cider vinegar, Dijon mustard, honey, smoked paprika, salt, and pepper.
  6. Toss the Slaw: Pour the dressing over the kielbasa, potato, and cabbage mixture. Toss everything together until evenly coated.
