Green Chili Chops With Sweet Potatoes

    • 1/2 teaspoon ground cumin

Instructions:

  1. Marinate the Pork Chops:
    • In a small bowl, combine the chopped green chilies, minced garlic, lime juice, olive oil, ground cumin, salt, and pepper.
    • Rub this mixture all over the pork chops, ensuring they are well coated.
    • Let the chops marinate for at least 30 minutes, or up to 2 hours for a more intense flavor.
  2. Prepare the Sweet Potatoes:
    • Preheat your oven to 400°F (200°C).
    • In a large bowl, toss the sweet potato cubes with olive oil, ground cinnamon, ground cumin, salt, and pepper.
    • Spread the sweet potatoes out on a baking sheet in a single layer.
    • Roast in the preheated oven for 25-30 minutes, or until tender and lightly browned, stirring halfway through.
  3. Cook the Pork Chops:
    • While the sweet potatoes are roasting, heat a large skillet over medium-high heat.
